We’ll guide you through the process, along with a recipe for marinating the chicken to make it fragrant and delicious with lemongrass and familiar spices, enhanced with fresh milk. Ingredients for Wichaiburi Grilled Chicken Marinade:
- 1 whole chicken (approximately 1 kg)
- 3 stalks lemongrass
- 20 cloves Thai garlic
- 7 coriander roots
- 1 tablespoon black peppercorns
- 2 pandan leaves
- 2 tablespoons oyster sauce
- 1.5 tablespoons white soy sauce
- 4 shallots
- 1/4 cup fresh milk
- 1 teaspoon salt
Instructions for Wichaiburi Grilled Chicken:
- Start by cutting the chicken to separate the wings and thighs and then butterfly it.
- Put the marinade ingredients in a blender and blend until smooth. Marinate the chicken with this mixture for at least 3 hours or overnight.
- When ready, bake the chicken at 180 degrees Fahrenheit for about 30 minutes. While baking, brush the chicken skin with oil to make it golden and beautiful.
- Once cooked, slice the chicken into pieces and serve it with the grilled chicken dipping sauce.

Ingredients:
- 1-2 tablespoons of lime juice
- 1 tablespoon of palm sugar
- 2 tablespoons of tamarind paste
- 2-3 tablespoons of fish sauce
- 1 tablespoon of toasted rice
- 1 tablespoon of chili powder
- Chopped green onions
- Chopped culantro leaves
Instructions:
- Mix together lime juice, palm sugar, tamarind paste, and fish sauce until well combined, then taste and adjust the flavors to achieve a balance of sour, sweet, and salty.
- Next, add roasted rice powder and ground chili, mix it well, and garnish with chopped green onions and Chopped culantro leaves.
