Khao Soi is a popular dish from Northern Thailand, known for its rich and creamy coconut curry broth. Here’s a simple way to make this delicious dish at home.
Ingredients
For the Curry Broth:
- 500 grams of chicken (you can use other meats if preferred)
- 400 ml of coconut milk
- 1 liter of chicken broth
- 3 tablespoons of Khao Soi curry paste (available at Asian grocery stores)
- 1 teaspoon of turmeric powder
- 1 teaspoon of salt
- 1 tablespoon of palm sugar
- 2 tablespoons of fish sauce
For the Noodles and Garnishes:
- 200 grams of Khao Soi noodles (or egg noodles)
- Vegetable oil for frying
- Pickled mustard greens, chopped
- Sliced shallots
- Lime wedges
- Fried chili paste
Instructions
- Prepare the Chicken and Broth: Heat a pot over medium heat and add 200 ml of coconut milk. Cook until it starts to separate and the oil begins to float to the top. Add the Khao Soi curry paste and stir-fry until fragrant. Add the chicken and cook until it is no longer pink. Pour in the chicken broth and the remaining coconut milk. Simmer until the chicken is tender.
- Season the Broth: Add the turmeric powder, salt, palm sugar, and fish sauce to the pot. Stir well and let it simmer for another 15 minutes to allow the flavors to meld together.
- Prepare the Noodles: In a separate pot, bring water to a boil and cook the noodles until they are done. Drain and set aside. Heat vegetable oil in a pan and fry a portion of the noodles until crispy. Drain on paper towels.
- Serve: Place the cooked noodles in a bowl, ladle the curry broth and chicken over the top, and garnish with the crispy fried noodles. Serve with pickled mustard greens, sliced shallots, lime wedges, and fried chili paste on the side.
