- 1 tsp vegetable oil
Preparation:
- Making the Curry Paste (if homemade): In a mortar and pestle, pound together green chilies, lemongrass, galangal, coriander root, kaffir lime rind, garlic, and shallots until it forms a fine paste. Add shrimp paste and blend well.
- Cooking the Curry: In a pot or wok, heat the vegetable oil over medium heat. Add the green curry paste and sauté until aromatic.
- Pour in half of the coconut milk and bring it to a boil. Add the sliced chicken and let it simmer until it’s nearly cooked through.
- Introduce the palm sugar and fish sauce for seasoning. Adjust according to your taste preference.
- Pour in the remaining coconut milk, followed by the Thai eggplants. Allow the curry to simmer until the eggplants are slightly tender.
- Add the kaffir lime leaves, Thai basil, and red chili slices. Let it cook for another 2 minutes.
- Serve hot with jasmine rice.
